I picked up this tub of unsalted soy nuts at the grocery store tonight. They have a nice nutty flavor that a light toasting will really enhance. And don't forget that crunch!
This little bit of texture can add a whole new dimension to any oatmeal-based cookie.

UPDATE: Still thinking this one through. It could be that these guys are better suited for salads than for cookies...
