When I write brown sugar in my recipes, what I mean is dark brown sugar.
I love dark brown sugar. Light brown? Pshaw! If I found extra-dark brown sugar, I'd use that. The reason? The darker the sugar, the chewier and more flavorful the cookie.
In the next few days, I'm going to reproof my recipes and make sure that I specify to use dark brown sugar.









This is good to know! There are so many options to choose from and I have erred by using light brown instead of dark. It does make a difference.
