In all my recipes that call for peanut butter, I use Skippy Roasted Honey Nut Creamy. (Jeeze...that's a mouthful.) It's just a tad sweeter than most peanut butters and, best of all, tastes great--even in your baked stuff.
It can be kind of hard to find, especially at my grocery store, which sometimes stocks it next to the salsa and maple syrup (don't ask...I can't figure out their shelving schema) and sometimes next to the bread, which is across from the stinky cheeses and the beer (of course!).
It can also make a great snack to hold you over until the Rosa Mexicano delivery guy shows up.
