Thanks for your note, Alicia. Your question about coconut-filled brownies got me thinking, and flash of a big cake with ooey-gooey coconut frosting flashed before my eyes as I read your email. So now I am now working on a German chocolate cake cookie.
The chocolate cookie "shell" that I developed for my Peanut Butter Cup cookie recipe is actually very, very fudgy--like a brownie. I'm going to come up with the coconut frosting/filling to stuff inside the cookie and will try to post the recipe later this week.








This combination sounds like the best yet - to my taste!! I'll look forward to your "German Chocolate Cake " oatmeal cookie. Could it also include caramel somehow - as does the frosting of German chocolate cake?

Hi, Lorraine. I've done a little research on the frosting, and it looks like almost every recipe uses condensed milk, sugar, and butter that's combined and heated, so it ends up kin dof caramel-y. I think that Duncan Hines and Betty Crocker make prepackaged frosting for German chocolate cake.
