I was going to make my Fourth of July Cookie today, but Mumma had other plans for me. She found a lime sherbert/vanilla ice cream combo and wanted me to use it as the filling in a sandwich made with Lime in the Coconut cookies. So Mumma brought me and Jon to the grocery store and then put us to work.
I thought I was off the hook when we couldn't find the sherbert/ice cream. But Mumma decided to add some toasted coconut and a splash of lime extract to some vanilla ice cream.
Sandwich pics to come. Waiting on the cookies to cool off completely and for the doctored ice cream to firm up. Phew...it's so nice being home.








These cookies are SO good they must be shared! So, I took a plateful over to my neighbor's, where they were quickly devoured. OCG has made a bunch of new friends who are only too happy to try any of his new creations. We still have a few days left, so maybe I can persuade OCG to make his 4th of July cookies, too. You can't have too much of a good thing!
