A few days ago, Mikey wrote in to ask me about toasting coconut. Here are some pics of the process.
Spread out the coconut (I use Baker's brand "angle flake" sweetened coconut) in an even layer.
Put the pan in the oven and bake at 400° for 10-15 minutes, stirring the flakes every couple minutes with a wooden spoon. Pull the coconut out just as the flakes become golden brown and still look kind of shiny. Pour the coconut in a bowl and let it cool. Tasty, crunchy, sweet...yummy!
