As promised, I'll soon be posting a recipe for a pumpkin pie cookie. See...I even bought a can of pumpkin!
Full disclosure time, though. I've never eaten pumpkin pie before. I love the way it smells, but I've never actually tasted it. But I'm guessing there's something missing from the mouthfeel experience of pumpkin pie--namely, crunch. Sure, there's the crust, but I think the smooth, custardy texture needs a crunchy element for balance.
I'm toying with including toasted walnuts, but I know some people don't like or are allergic to nuts. I'm also thinking of including chocolate chips (thanks for the idea, Kim), but Mumma seemed dubious when I mentioned it to her. And then I was thinking of including both toasted walnuts and chocolate chips.
Decisions, decisions... What do you, dear readers, think?








I vote for chocolate chips and maybe toasted almonds...

Not too sure about chocolate and pumpkin together, but I like the idea of nuts. Gramma always used walnuts in her pumpkin bread and sometimes raisins, as well. Toasted coconut might be an option. I'm confident that you will find the right balance and these cookies, like all the others, will be super spectacular!

I'm with Jonnazz. I think chocolate chips and toasted almonds are a good combo with the pumpkin pie flavor. Could it be that we have similar taste?

Lorraine and I do have similar tastes...probably because she used to get me ice cream flavors that she liked (coffee and mint chocolate chip) so she could "help me out" finishing them...

Make a pumpkin flavored Golden Girl. Pumpkin cheesecake is fabulous. I am not a fan of the pie, but the cheesecake is awesome. And don't grind the graham crackers too finely or caramelize a few of them for that added crunch for those who are allergic to nuts.

I've always found the texture of pumpkin pie a turnoff, so I look forward to seeing how your cookies turn out! I think that's just what they need!
On another note, we have a favorite healthyish dessert in my family. We call them "Muffkins." You mix a can of pumpkin (like in your picture) with Devils food cake mix and a tbsp. of water. Then bake at the time and temp on the box, in mini-muffin tins. SO GOOD!! Chocolatey and dense and wonderful, all bite-sized. Just sharing the love!!
