I just found your site and spent *way* too much time looking at all the wonderful recipes. You're now in my Google Reader so I don't miss another post :)
One quick question that I'm sure you've answered time and time again, but for us newbies, what kind of oatmeal do you use: old-fashioned? Quick-cooking? I'm pretty sure it's not instant or steel-cut.

As for your question: I use old fashioned oatmeal in my recipes. I think you could use quick cooking oatmeal in a pinch, but the texture of the finished cookies will be a little mealier and drier.
