Here's the recipe for my Coconut Rum Raisinet Cookies in process.
Toast the coconut.
Soak the raisins in rum to enplumpen 'em. Soak for 30-45 minutes (or longer, if you have the time).
Cream the creamables. Butter and dark brown sugar.
Combine the wet ingredients. Egg, vanilla, coconut extract, and rum.
Add the wet ingredients to the creamables. Mix.
Drain the raisins and add them to the combined wet ingredients and creamables. Mix again.
Combine the dry ingredients and add them to the combined enplumpened raisins, wet ingredients, and creamables.
Scoop, bake, and enjoy!
