Hi, Jenni! Thanks for writing in. If you're interested in doing a chocolate-filled cookie, I think you should check out the filling part of the recipe for my Inside-Out Peanut Butter Cups. (It's a cookie with a peanut butter exterior and a soft, chewy chocolate interior.) To get the right flavor and texture for the filling, I used cream cheese, melted semisweet chocolate chips, cocoa powder, milk, and a little bit of salt. I think this will approximate that Maggic Middles center you're looking for.
