My mouth is watering! You make the BEST eggplant parm! It's even better than Mamma Mia's...and they make great eggplant! This is an easy but time consuming dish, although using the mandolin to slice the eggplant evenly cuts down a considerable amount of preparation time. The leftovers (if there are any) make wonderful sandwiches--hot or cold.
