Here's the recipe for my (Dark) Chocolate Lime in the Coconut Cookies in process.
Cream the creamables. Butter and dark brown sugar.
Combine the wet ingredients. If you don't have or can't find lime extract, replace it with an equal amount of lime juice. I put the unused portion of the cream of coconut in the freezer to use in future recipes.
Add the wet ingredients to the ceamables. Mix.
Combine the dry ingredients and add them to the combined wet ingredients and creamables. Mix again.
Scoop and bake the cookies. These guys really spread out, so make sure you leave enough room between each dough ball. Delicioso!
