I've been thinking of making a deep-fried oatmeal cookie for a while now. I've had a few ideas so far, including just taking scoops of cookie dough and floating them in hot oil for a while until they get nice and crispy and brown on the outside. I've also thought about taking cookies baked in the traditional way, battering them, and then frying them--kind of like a deep-fried Oreo.
And then it hit me. Why not make an oatmeal version of a fried cookie. Enter the cannoli, which I think will work perfectly for my purposes.
