I looooove candy corn! Any plans to make a candy corn oatmeal cookie? Halloween is more than a month away. I can't get enough of the stuff.
Hi, Carrie. Thanks for writing in! It's not quite October yet, but it's never too early to think about new recipes.
I've thought about doing a candy corn cookie before, but I've never been sure how to maintain the integrity of the candy during the baking process. Candy corn is made of sugar and corn syrup, which, I'm afraid, will liquefy in high heat and "bleed out" of the cookie. (Hmmm...that's an interesting image for Halloween!)
I think that a drop cookie with with pieces of candy corn in it won't work so well. I'm going to play around and see if I can come up with a cut-out cookie with bands of color/flavor that mimic the look of real candy corn. Stay tuned!
