You should so make Coke cookies. Or like, chocolate-covered cherry/Coke cookies. What do you think? Would that work? Or what about caramel popcorn cookies? Or some sort of sweet/popcorn cookie?
Hi, Patrick. Thanks for your email! Funny you should ask about using Coke and caramel corn in cookie recipes.
I've been thinking about how to use Coke in a cookie for a while now. I know that Coke cake is "a thing," so that's intrigued me. The problem with using a wet ingredient as the sole--or main--flavoring is that you get a wet dough that yields spongy cookies. I'll have to investigate how to concentrate the Coke flavor without drowning the dough. Coke syrup, maybe?
As for the caramel corn, I've attempted a Cracker Jack cookie before, but they turned out really, really soggy because the popcorn kind of disintegrated once it hit the wet ingredients. (Dang! I should have turned that into an Oops! post.) But I know Cracker Jack can be friends with wet stuff because I had caramel corn ice cream once.
