Here's the recipe for my Key Lime Pie Cookies in process.
Zest and juice your limes.
Whisk together the instant vanilla pudding mix and the lime zest, juice, and extract. Refrigerate to solidify.
Cream the creamables: butter and dark brown sugar.
Combine the wet ingredients: an egg and vanilla extract.
Combine the creamables and wet ingredients. Mix.
Combine the dry ingredients. Don't forget to measure the graham crackers after you grind them up. Then add the dry ingredients to the combined creamables and wet ingredients. Mix.
Scoop the dough balls and make the thumbprint indentations. Feel free to form the dough balls into little cups.
Fill the thumbprints with the lime/pudding mixture, bake, and enjoy. For a schmancy finishing touch, drizzle with melted white chocolate. But believe me...these cookies are perfect as they are.
