This post intrigued me. Greg, do you think we'd get the same delicious filling results if we slathered the filling mixture (unbaked) onto each cooled cookie? Oooh, just had another idea... can you come up with a sandwich cookie version of your yummy Stuffed Carrot Cake Cookies, or perhaps for all of your stuffed cookies? I reckon the filling would have to be thickened for sandwich cookies.
Hi, Amelia. Thanks for writing in, and thanks for suggesting sandwich cookies! I think you're right: The filling for the stuffed cookie would need to be thickened a bit to be used as a frosting or filling for a sandwich cookie. And I think the cookies themselves would have to be a bit smaller and thinner.
This is definitely something I'll have to explore. I also want to come up with some ice cream sandwich cookies too!
