Zest and juice your lemons and limes.
Cream the creamables: butter and dark brown sugar.
Combine the wet ingredients: an egg; vanilla, coconut, lemon, and lime extracts; lemon and lime juice; and lemon and lime zest.
Combine the creamables and wet ingredients. Mix.
Combine the dry ingredients. Then add the dry ingredients to the combined creamables and wet ingredients. Mix.
Scoop the dough balls, smoosh them a bit to flatten them, and bake. Citrusy, light, chewy, and crunchy. Delish!
