Here's the recipe for my Strawberry, Coconut, and Almond Cookies in process.
Cook the strawberries, white sugar, milk, lemon juice and zest, and vanilla and raspberry extracts.
Cream the creamables: butter, white sugar, dark brown sugar, and Strawberry Quik.
Add the cooled strawberry mixture to the creamables. Mix.
Combine the dry ingredients.
Add the dry ingredients to the combined creambles and cooked strawberries. Mix.
Scoop, flatten a little, and bake. Chewy, fruity, crunchy, and delicious! These would make for excellent ice cream sandwiches.
