Here's the recipe for my Mojito Cookies in process.
Cream the creamables: butter, dark brown sugar, and white sugar.
Combine the wet ingredients. This may seem like a thick combination, but trust me...it works. Mix together an egg yolk, lime juice, lime zest, the contents of three mint tea bags, vanilla, and rum.
Combine the dry ingredients and add to the combined creamables and wet ingredients.
Scoop, bake, and cool the cookies.
While the cookies cool, make the icing: confectioner's sugar, lime juice, rum, and the contents of two mint tea bags. Then drizzle over the cooled cookies. Cheers! (Or should that be salud?)
I was present for the birth of this incredible edible, and I have to say that it is amazing to watch the Oatmeal Cookie Master in action.
Even though my kitchen is ill equipped for his culinary exploits, OCG still manages to make a great cookie. This one is tart and sweet and minty. A nice combo of flavors and the texture is just chewy enough without being crumbly. Good job!
