I love my readers. They came through with suggestions for boosting the peach flavor in my Bellini cookie after my first attempt, and now they've come through with even more suggestions after my second.

Maybe you could take a jam/preserves-thumbprint cookie approach, or even a stuffed cookie with a thicker dried apricot or peach puree/mixture, and/or you could use apricot/peach nectar in the wet ingredients. I've spiked jam with booze plenty of times as a filling for layer cakes, and you could definitely adapt that concept to jam thumbprints!

One other idea running through my head if this was the case, was the possibility of using either peach nectar in maybe a glaze topping or using Peach Nehi.

How about some lemon zest or juice? Perhaps it would boost up the peachy flavor?
