Here's the recipe for my Orange Creamsicle Cookies in process.
Zest and juice your oranges.
Whisk together the instant vanilla pudding mix, vanilla, and orange zest, juice, and extract. Refrigerate to solidify.
Cream the creamables: butter and white sugar.
Combine the wet ingredients: an egg and vanilla.
Combine the creamables and wet ingredients. Mix.
Combine the dry ingredients. Don't forget to measure the oatmeal and Nilla Wafers after you grind them up. Then add the dry ingredients to the combined creamables and wet ingredients. Mix.
Scoop the dough balls and make the thumbprint indentations. Feel free to form the dough balls into little cups.
Fill the thumbprints with the orange/pudding mixture. Bake then cool.
As cookies are cooling, melt white chocolate. Then drizzle or use a spatula to spread the melted white chocolate over the cooled cookies. Delicious!
