On Friday night, my friend Katie and I had the pleasure of joining Melody, our jr. high school health teacher, and her husband Bob for a light, healthy dinner at their beautiful home and farm in Middleboro.
It was just in a nick of time, too, because the Oatmeal Cookie Guy's recent diet of Pop-Ices, iced coffee, cookies, and cheese sandwiches just wasn't cutting it. Without some straight-from-the dirt produce, I have no doubt that scurvy would have set in.
We enjoyed an enormous salad of spinach, strawberries, oranges, chicken, brown rice, nuts, raisins, dried cranberries, goat cheese, and garlic scapes. It was a delicious and healthy dinner and a super-fun night.
Katie and I each left with bags full of freshly picked Swiss chard, spinach, bok choy, strawberries, rhubarb, and garlic scapes--a greenmarket bonanza! And I left promissing to make Melody and Bob cookies to share with the members of their food co-op. An excuse to bake and try out new recipes...how could I resist?
Stay tuned. I think my first attempt at a co-op cookie will be strawberry-rhubarb.
